YUCATECAN FOOD / BEFORE YOU ORDER

What is cochinita pibil?

Cochinita pibil is a Yucatecan pork dish, cooked until tender with an achiote-based marinade and citrus. The name describes the filling: a taco and a torta are two different ways to eat it.

Pork, achiote and sour orange.

Recado rojo is the achiote-and-spice seasoning that gives the meat its characteristic colour. Sour orange adds acidity. Onion and habanero often accompany the finished dish; ask whether the onion already contains chile before adding more salsa. Read the culinary reference ↗

What does “pibil” mean?

The name refers to cooking associated with the Maya píib, an earth oven. Banana leaves are part of the traditional preparation. Modern cooks also use conventional ovens, so seeing “cochinita pibil” on a menu does not prove that this particular batch was cooked underground. Read the culinary reference ↗

Before your first bite

Is cochinita pibil pork?

Yes. It is a pork dish. Ask about preparation and ingredients if you have dietary requirements.

Does the red colour mean it is very spicy?

Achiote contributes colour. The marinade and accompaniments vary; ask about chile in the meat, onion and salsa rather than judging heat from the photo.

Is it only a Sunday breakfast?

Yucatán Travel describes Sunday breakfast as a strong tradition, while noting that cochinita is also available on other days. Each Playa vendor has its own hours and availability.
